Capture the magic of Easter in every bite of this vibrant, multi-layered treat topped with a rainbow of sprinkles and mini eggs.
Ingredients
250g unsalted butter, chopped
250g mini eggs
1 1/2 cups plain flour
1.20kg canned Woolworths sweetened condensed milk
1 cup firmly packed brown sugar
180g white chocolate, chopped
1 tbs vegetable oil
2 tbs bright sprinkles
Directions
Step 1
Preheat oven to 180°C/160°C fan-forced. Grease and line a 22cm (base) square cake pan with baking paper, allowing paper to overhang at 2 opposite sides for handles. Place half of the butter in a microwave safe bowl. Microwave on high for 30 seconds or until melted.
Step 2
Briefly process mini eggs until chopped. Transfer half of the mini eggs to a bowl and set aside. Add flour to eggs in processor and process until combined. Add melted butter and process until combined. Press over base of prepared pan. Bake for 10-15 minutes or until lightly browned. Cool.
Step 3
Meanwhile, place remaining butter, condensed milk and sugar in a heavy-based saucepan over low heat. Cook, stirring continuously, for 12-15 minutes or until mixture thickens and forms a ribbon effect when spoon is lifted from caramel.
Step 4
Pour caramel over base in pan. Refrigerate for 4 hours or overnight until set. Place chocolate and oil in a microwave-safe bowl. Microwave on high, in 30 second bursts, stirring every 30 seconds for 1-2 minutes or until smooth. Pour melted chocolate over caramel. Top with reserved chopped mini eggs and sprinkles. Refrigerate for 1 hour or until set. Cut into pieces to serve.

500g Woolworths RSPCA Approved chicken breast fillet, cut into strips
5ml extra virgin olive oil spray
450g Woolworths American-style coleslaw kit
1/4 bunch coriander, leaves picked
1 cup Dairyworks grated tasty cheese
Method
Step 1
Preheat oven to 220°C/200°C fan-forced. Line a large tray with baking paper.
Step 2
Place chicken in a bowl. Add spice mix and toss until coated. Transfer to tray and spray with oil. Bake for 15 minutes or until golden.
Step 3
Heat a chargrill pan over medium-high heat. Cook tortillas for 30 seconds each side or until lightly charred. Prepare coleslaw according to packet instructions.
Step 4
To assemble, divide tortillas amongst plates. Top with coleslaw, chicken, cheese, coriander and sauce. Serve.

Step 1
Coat salmon with seasoning mix. Drizzle with oil and pan-fry for 3 minutes each side for medium or until cooked to your liking.

Ingredients
950mL Pana Organic Madagascan Vanilla Bean Frozen Treat
1 cup frozen pitted cherries, halved
2 pkt Green's Chocolate Brownies Mix
4 eggs
160g Nuttelex Buttery Table Spread, melted
Directions
Step 1
Grease and line three 5cm deep, 20cm square cake pans with baking paper, extending paper 2cm above the edge on all sides.
Step 2
Spoon frozen treat into a large bowl. Set aside for 2 minutes until softened (but not melted). Add cherries and gently fold to combine. Spoon mixture into 1 prepared pan. Spread out evenly, then smooth top. Freeze for 4 hours or until firm.
Step 3
Meanwhile, preheat oven to 200°C/180°C fan-forced. Place brownie mix, eggs and spread in a large bowl. Mix with a wooden spoon until combined. Divide mixture among remaining prepared pans. Spread out evenly and smooth tops. Bake for 30 minutes or until brownies are set. Cool completely in pans.
Step 4
Remove brownies from pans. Place 1 brownie on a chopping board. Working quickly, remove frozen treat from pan and place on top of the brownie. Sandwich with the remaining brownie, gently pressing to secure. Cut the prepared slice into twelve 5x7cm pieces. Serve immediately or return to freezer.

Triple pistachio trifle
A trifle rich with Pistachio Papi spread, fresh summer berries, and creamy custard – it's guaranteed to be the star of your Christmas celebrations.
Ingredients
255g raspberry flavoured jelly crystals
125g raspberries
200g Pistachio Papi smooth spread
230g double vanilla sponge cake
225g Woolworths cream cheese, softened
1 1/2 cup thickened cream
1 tbs icing sugar mixture
1/2 cup vanilla custard
170g blackberries
250g strawberries, halved
100g fresh cherries
1 tbs pistachio kernels, roughly chopped
Directions
Step 1
Prepare jelly according to packet instructions and pour into a 3.7L trifle dish. Chill for 2 hours 30 minutes, or until just starting to set. Press half of the raspberries into the jelly mixture. Chill for a further 4 hours or until set.
Step 2
Place 2 tbs spread in a small microwave-safe bowl. Microwave on high for 20 seconds or until melted. Place sponge cake on a chopping board. Trim top to level, if necessary. Carefully cut the cake in half horizontally. Spread base of cake with pistachio spread. Sandwich with cake top. Cut into 3cm pieces.
Step 3
Using an electric hand mixer, beat cream cheese, 1/2 cup cream and icing sugar until smooth and thick. Add 1/4 cup pistachio spread and beat until just combined and just-stiff peaks form. Wash and dry beaters. Using the electric hand mixer, beat remaining cream until just firm peaks form. Add custard and beat until just-stiff peaks form.
Step 4
Arrange sponge pieces, blackberries, strawberries, cherries and remaining raspberries with dollops of cream mixtures into the trifle bowl over jelly. Place remaining spread in a small microwave-safe bowl. Microwave on high for 20 seconds or until melted. Drizzle over trifle and sprinkle with pistachios. Serve.

Toasted Coconut & Passionfruit Layer Cake
Infused with the vibrant flavours of the tropics, this delightful toasted coconut and passionfruit layer cake is perfect for your Christmas dessert table.
Ingredients
2 1/2 cups plain flour
1 1/2 tsp McKenzie’s Baking Powder
1 tsp McKenzie’s Bi-Carb Soda
1 1/2 cups caster sugar
375g unsalted butter, softened
4 eggs
1 cup Greek-style natural yoghurt
2 cups McKenzie’s Fine Desiccated Coconut
225g cream cheese, softened
3 cups icing sugar mixture
2 passionfruit, quartered
125g raspberries
6 cherries
Directions
Step 1
Preheat oven to 170°C/150°C fan-forced. Grease and line 2 x 20cm (base) round cake pans with baking paper. Combine flour, baking powder and bicarbonate of soda in a bowl and set aside. Using an electric mixer, beat caster sugar and 250g butter in a bowl until creamy. Add eggs, one at a time, beating well after each addition. Stir in yoghurt.
Step 2
Stir in flour mixture and 1 cup coconut until just combined. Divide batter among prepared pans. Smooth surfaces. Bake for 35 minutes or until a skewer inserted at the centre comes out clean. Transfer to wire racks to cool. Place remaining coconut on a baking tray and bake for 5 minutes or until golden.
Step 3
Using an electric mixer, beat cream cheese and remaining butter in a large bowl until smooth. Add icing sugar and beat until smooth. Place 1 cake on a plate. Top with 1 cup icing. Top with remaining cake. Spread remaining icing over cake to cover. Press toasted coconut around side and top of cake. Decorate with passionfruit, raspberries and cherries. Serve.

The ultimate Halloween cocktail, the Blackberry Bat-garita, is spookily stunning and hauntingly delicious. With a blend of tequilla, zesty lime, zippy orange liqueur, blackberry liqueur, and a touch of activated charcoal, this eerie-looking is the perfectly flavoured portion to enchant your guests’ tastebuds.
Here’s What You’ll Need
30ml Patron Silver Tequila
30ml Cointreau
30ml Fresh Lime Juice
30ml Blackberry Liqueur
Black food colouring
Ice
Sugar, salt, and activated charcoal powder for the rim
Here’s How To Make It
Make a sugar-salt rim: In a small bowl, mix sugar, sea salt and activated charcoal. Run a piece of cut lime over one side of the glass. Dip generously into the mixture.
Add ice into a shaker with tequila, Cointreau, blackberry liqueur.
Squeeze lime into a measuring cup or glass and dye to a dark purple-black with the food colouring.
Pour over fresh ice into glass.
