Puff perfection meets a matcha-made-in-heaven strawberry cream for an elegant treat that’s sure to impress your guests.
Swap tip:
Strawberry and matcha is a winning combination, but you can make the cream any flavour you like. Try replacing matcha powder with cocoa powder for variety.
Instructions
2 sheets Woolworths puff pastry, thawed
1 egg, lightly beaten
250g strawberries, tops trimmed, cut into wedges
2 tbs caster sugar
600ml Woolworths thickened cream
2 tbs matcha powder
1 tbs icing sugar
Directions
Step 1
Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Cut each sheet of pastry into 4 equal squares.
Step 2
Fold each square in half to form a triangle. Arrange pastry triangles in a single layer on prepared tray. Brush with egg. Bake for 10-15 minutes or until puffed and golden. Using a small knife, slice open the triangles along the edge (be careful not to slice all the way through). Set aside to cool completely.
Step 3
Meanwhile, combine strawberries with 1 tsp caster sugar in a small bowl and set aside. Add cream, matcha and remaining caster sugar to the bowl of a stand mixer fitted with a whisk attachment. Beat on medium speed for 2 minutes or until soft peaks form.
Step 4
Transfer cream to a piping bag fitted with a 1cm star nozzle. Pipe cream into pastry. Top with strawberries. Dust with icing sugar. Serve.
