Wow a crowd with these simple, flavour-packed prawn brioche rolls, paired with crispy shaker fries seasoned to perfection.
Ingredients
1kg Woolworths shoestring fries
50g unsalted butter
6 brioche hot-dog rolls
1kg cooked tiger prawns, peeled and deveined
1/3 cup Woolworths mayonnaise
1 small lemon, zested, juiced
2 sticks celery, finely chopped
1 punnet chives, finely chopped
1 tbs Old Bay seasoning
Directions
Step 1
Preheat oven to 230°C/210°C fan-forced. Line 2 large baking trays with baking paper. Spread fries across prepared trays. Bake for 20 minutes, turning halfway through, or until golden.
Step 2
Meanwhile, add butter to a medium frying pan on low heat. Cook for 1 minute or until melted. Brush tops of rolls with butter and set aside. Toss prawns through warm butter and remove from heat.
Step 3
In a medium bowl, add mayonnaise, lemon zest, juice, celery and half of the chives. Add prawns and butter mixture and stir to combine.
Step 4
Add seasoning to a paper bag. Add fries, in batches, shaking in bag to coat in seasoning. Place buttered rolls on a baking tray and bake in preheated oven for 1 minute or until warmed through. Spoon prawn mixture into rolls. Sprinkle with remaining chives. Serve with seasoned fries.
