When the temperature drops, turn up the heat in the kitchen with a comforting bowl of roasted tomato soup and gooey garlic cheese toasties for dipping.
Ingredients
1kg tomatoes, cut into wedges
1 brown onion, cut into wedges
4 cloves garlic, sliced
2 tbs extra virgin olive oil
2 white washed potatoes, peeled, finely chopped
1L Woolworths vegetable stock
8 Woolworths garlic bread slices
4 slices tasty cheese, halved
2 tbs thickened cream
1/4 punnet thyme
Method
Step 1
Preheat oven to 220°C/200°C fan-forced. Place tomato, onion and garlic, cut-side up, in a large roasting pan. Drizzle with oil. Roast for 15 minutes or until tender.
Step 2
Place tomato mixture and potato in a large saucepan. Add stock and 1 cup water. Bring to a boil over high heat. Reduce heat to low and simmer for 10 minutes or until potato is tender. Using a stick blender, blend until smooth.
Step 3
Meanwhile, preheat a sandwich press. Place 4 garlic bread slices on a board, butter-side down. Top each with 2 slices of cheese. Sandwich with remaining garlic bread slices, butter-side up. Cook in sandwich press for 1-2 minutes or until golden and toasted.
Step 4
Ladle soup among bowls. Drizzle with cream and sprinkle with thyme. Season with freshly ground black pepper. Serve with cheese toasties.
