Elevate your Greek-style summer salad to new heights with a symphony of exquisite flavours and scrumptious fried feta.
Ingredients
2 tbs cornflour
200g Greek-style feta, cut into cubes
2 tbs extra virgin olive oil
1 Lebanese cucumber, roughly chopped
125g mini Roma tomatoes, halved
1/2 small red onion, thinly sliced
1 green capsicum, halved, deseeded, thinly sliced
1/4 cup pitted Kalamata olives
1/4 cup Greek salad dressing, to serve
Method
Step 1
Add cornflour and feta to a medium bowl, tossing to coat feta.
Step 2
Heat oil in a large frying pan over medium heat. Add feta and cook for 2 minutes or until crispy, then flip and cook on the opposite side for 1 minute until evenly golden. Remove feta to a plate lined with paper towels to drain.
Step 3
Combine feta with remaining ingredients, lightly toss and drizzle over salad dressing to serve.
